Citrus Poppyseed Muffins (posting for Mom)

These are so tasty! (Damaris' comment, the rest is from Mom)

I made quite a lot, but I think you could easily halve the recipe or freeze them.

Citrus Poppyseed muffins.

1/2 cup soft butter
1/2 cup oil
1.5 cups sugar
4 eggs
3.5 to 4 cups flour
4 level tsp baking powder
1 tsp salt
1/2 tsp baking soda - squish out ay lumps if you’re not going to sift your dry ingredients..
Grated zest and juice for 1 orange, 1 lemon and 1 lime.  Don’t use the white part of the skin. You should have about 3/4 cup of juice.
about 1/3 to 1/2 cup of poppyseed, or to taste.

Mix together the butter, oil and sugar. Add the eggs and one cup flour and mix till blended
Mix or sift 2 cups of flour, the baking powder, baking soda and salt together.  Add this to your mixture along with the citrus zest juice and zest. Mix till just blended.

Stir in the poppyseed and the additional flour (1/2 cup or 1 cup) until the mixture feels right. It should be just right for holding its shape as you spoon it into muffin tins.

Fill greased or paper-lines Muffin tins 1/2 to 2/3 full and bake at 350 deg for 15 to 20 minutes till just golden.

I made 18 cupcake sized muffins and 24 small muffins from this mixture.
